Loaded Smashed Potatoes

This is a great recipe from our Backyard Hibachi Cookbook and can be a side dish for dinner or an easy crowd-pleasing appetizer!

Loaded Smashed Potatoes

Take 1 pound of small golden potatoes and boil until tender.

Fire up your grill to medium heat

Cook a few strips of bacon until crispy and set aside.

Add 2 tablespoons of butter to the grill to melt. Add 8-10 potatoes to the grill and smash them flat with your spatula, like so.

Let them cook until they start to brown on the bottom and then flip them over. Add a little more butter if needed.

Sprinkle liberally with shredded cheddar cheese and crumble some bacon over the top. Add chives or parsley if you like.

Let the cheese melt while the potatoes brown on the bottom then move to the side to stay warm, or transfer to a plate for serving.

Warning, these may not make it to the table if left out where your guests or family can see them... ; )
